Stracciatella is made from the mozzarella dough; after we form a sheet of paste, it is ripped by hand and that is where the name comes from: ripped in Italian is stracciato, therefore Stracciatella.
These ripped bits are then cut into smaller pieces and mixed into fresh cream to give the blend its characteristic consistency.
Few people know this product;, it is a by-product of cow milk mozzarella dough and is the filling used to make burrata.

SHAPE: it is semi liquid.
EXTERNAL FEATURES: creamy white.
INTERNAL FEATURES: the inside of this cheese is exactly like its outside and has no rind.
AROMA: very strong buttery and lactic scents as well as a delicate and sweet aroma with hints of fresh milk.
FLAVOUR: it is balanced, savoury but sweet with a very oily and fatty paste, it tastes like fresh cream.
- Food pairings:
Great with fresh truffles, avocado pear, tomato, extra virgin olive oil, prosciutto, and other cold cuts. Perfect with various combinations either as is or cooked for warm first course dishes.
- Wine pairings:
Best served with wines from its production region, like Locorotondo sparkling wine, and Aleatico di Puglia Liquoroso.
