This cheese has an excellent flavour thanks to skilled expertise in the ageing process and usage of old Tuscan traditions. Many try to imitate this product but there is only one “PIPARELLO” and this is it! The secret is in the ageing process, which means taking a cheese from good to excellent by skilfully ageing it in the “right” place. In fact, it is aged in grottoes where temperature and humidity are natural. Production and ageing processes, which give it its particular character, are exclusively traditional. And finally, this cheese is not aged like all the others, lying horizontally, but rather it stands vertically.
Pasteurized sheep milk, live MILK enzymes, rennet, salt. ALLERGENS: MILK and MILK protein
Forme : cylindrique à faces planes d’un diamètre de 22 cm et à talon droit, légèrement convexe de 7-8 cm et à arête vive ;
Aspect extérieur : croûte dure, un peu humide et légèrement ridée, de couleur brun clair avec des nuances foncées ;
Aspect interne : la pâte est de couleur blanc ivoire et crayeuse, elle s’effrite à la coupe et est friable au toucher, elle a un grain très fin et une peau de consistance moyenne ;
Odeur : végétale d’herbe et de noix, généralement de fruits secs, mais aussi un peu de musc ;
Goût : équilibré, intensité moyenne, salé et sucré, on retrouve certaines sensations perçues par le nez, en bouche il est friable et a une bonne persistance.
- Food pairings:
Serve on a cheese platter or as antipasto with cold cuts. Great with Abbé Fetel pears, nuts, and walnuts.
- Wine pairings:
Best with a full-bodied and structured red wine.
