This is a new burrata and a variation of the classic one to offer our customers something new and surprising! Burrata is a spun paste fresh cheese, similar to mozzarella with a softer and stringier consistency. This cheese is typical of Murgia, a region in Puglia, and specifically from Corato (Bari). This is a sweet, buttery cheese with white skin is that is smooth and glossy. Grated truffle is mixed with the stretchy strings of paste that are inside it.This burrata is hand made from beginning to end.

FORME , de poire typique, et liée sur la partie supérieure pour que la farce ne sorte pas.
ASPECT EXTERNE, fromage de couleur blanc porcelaine, avec la peau assez brillante.
ASPECT INTERNE, une fois la burrata coupée, un liquide blanc crème sort ainsi que des filaments de pâtes et des points noires correspondant à la truffe râpée.
ODEUR, au nez on trouve le beurre et une senteur lactique très prononcée, ainsi qu’une note caractéristique de tubercule.
SAVEURS, équilibré, salé et légèrement épicé avec une pâte très onctueuse et grasse. En bouche on trouve une délicate saveur de truffe qui se marie parfaitement avec la douceur de la crème et de la stracciatella.
