This cheese is the meeting point of two excellences: the Golden crust pecorino with Vestri chocolate.
More precisely, it is not so much about chocolate as about cocoa, which comes from cultivations in the Dominican Republic, in the lush hills a few kilometers from the Caribbean Sea, and is called “plantation” (or CRU). This means that it has biological, organoleptic, chemical-physical properties specific to specific places, and, as such, retains in its flavor the characteristics of the place of production. The plantations are controlled, monitored and analysed; the methods of cultivation, harvesting and processing are skilfully carried out ONLY by hand by expert operators who select and select grains after grains. No chemical or synthetic additives, preservatives of any kind or growth accelerators are used at all. The only elements used are the rain, the sun, the wind and the precious climate, warm, humid and brackish. The result is a unique raw material, above all genuine, authentic, free of contamination, therefore ideal for use in our refining processes.
Our cheeses are placed in oak barrels with roasted cocoa beans and cocoa powder, this contributes to give a unique and characteristic aroma to the cheese itself, eating the rind together.

:Shape: typical of Tuscan pecorino, bowled, cylindrical with flat faces and convex and rounded heel;
External appearance:the crust is thin and of medium consistency, dry, with the presence of cocoa beans and cocoa powder, thus assuming the characteristic brown color more or less dark depending on whether the shape in the aging was at the top or bottom of the barrel;
Internal appearance: the paste is dry and compact, just chalk and compact, with small and uneven eyes and white tending to straw-colored presence of thin nail in the under crust;
Odour: lactic of cooked butter, but roasted vegetables, coffee and cocoa prevail;
Taste: delicately salty, with a slight bitter note that recalls toasted cocoa, which will become very bitter, if you eat the crust, has a crumbly structure and slightly lumpy.
