“Occhiobello” – Cow’s milk cheese semi-aged De’Magi
When we opened the first shape of this cheese the first thing we thought was but what a beautiful eyelet this cheese has! So naming it was easy and intuitive.
The aromatic profile of this cheese is very interesting, because we can describe it as a middle ground between a Swiss and a Dutchman, that is, it is sweeter than Emmenthal and tastier than Dutch. Chewing a piece of this cheese you can clearly see a feeling of herbs but especially of dried fruit (walnut) that is really clear.
The rind is edible, so it can be eaten.
Ingredients: Pasteurized milk, milk enzymes, rennet and salt, lysozyme (Egg protein).
Size: about 8,5 Kg.
Packaging: shape wrapped with parchment paper.
Duration of the packaged product: 40 days.
ALLERGENS: MILK and MILK proteins, Eggs.
Shape: cylindrical with a flat face and a very convex upper face, barely convex and slightly rounded edge;
External appearance: thin, dry, slightly striped rind with a deep straw yellow colour;
Internal appearance: semi-hard, slightly elastic and rubbery but compact paste, the eyes are evenly spread, large and regular in size, the colour is straw yellow;
Odour: interesting is the lactic acid of cooked butter, nuts and very aromatic flowers and herbs, with a slight alcoholic note;
Taste: the primary sensation is the sweet medium-high, then the salty medium-low, a slight acidity, the paste is compact, grainy, deformable and slightly adhesive.
Availability: all year round.
Food pairings: fantastic cut into cubes for an aperitif, placed in a dish with cold cuts, also perfect for the preparation of dishes given its propensity to melt and spin.
Oenological pairings: white wine, red wine not very structured, but also a bubble is very good.
