“GRIGIONE” – Raw cow’s milk De’Magi
Although the shape may recall a famous Piedmontese DOP cheese, it is not, it is called Graubünden because the rind of this cheese is gray in color because of the natural mold it acquires during the maturation phase.
The rind is rough, with the presence of the weave of cloth that is used in the first period during maturation, and also carries with it the signs of the folds of the fabric. During ripening, the rind of this cheese is not washed, but brushed, thus giving it its characteristic colouring and the presence of mould in the rind.
The paste is not always the same, the eyes more or less present, the crust sometimes cracked, a different artisan cheese every month, every week, every day … that is nice even just to observe, let alone taste. It is not a cheese that you eat in a hurry, you must listen patiently to his story as the wise old farmer does with the child.
The crust is NOT edible, so it cannot be eaten.
Ingredients: Raw milk, rennet and salt.
Size: about 8 Kg.
Packaging: shape wrapped with parchment paper.
Duration of the packaged product: 45 days.
ALLERGENS: MILK and MILK proteins.
Shape: cparallelepipedal with a square base, even if irregular, the faces are flat even if a little convex, the heel is straight irregular also because it has convex parts and other concave;
External appearance: medium thick and dry crust, but moulded with natural mould, it has a weave of cloth, its colour is grey with lighter and darker machie;
Internal appearance: semi-hard, slightly elastic paste, the eyes are evenly spread, of medium/small to medium size and irregular, the colour is straw yellow;
Odour: the lactic acid of fresh butter, vegetable of fresh hay, with a slight animal scent, is interesting;
Taste: the primary sensation is the sweet medium-high, then the salty medium-low, a slight acidity, the paste is compact, grainy, deformable and slightly adhesive.
Availability: all year round.
Food pairings: fantastic cut into cubes for an aperitif, placed in a dish with cold cuts, also perfect for the preparation of dishes given its propensity to melt and spin.
Oenological pairings: white wine, red wine not very structured, but also a bubble is very good.
