“Bozza” – Cow’s and Sheep’s milks cheese aged De’Magi
Every cheese has a history, every cheese has a path, every cheese has a character… this is a new invention and creation, the result of chatting with the cheesemaker in front of a good glass of wine… the Bozza is born, a cheese that was not there. This creation, given by the imagination and the desire to always propose something new and unique, in this case we think we have succeeded, in front of a cheese like this you can only be surprised.
It is not a pecorino or a caciotta, but a cheese made with cow’s milk and sheep’s milk in an unusual form, which is the shape that usually had the drafts of tuff used to make the house in the 60’s, from this comes the name of this cheese. Beyond the shape, what is surprising is when you taste it, since it is a cheese that does not tire, very tasty and appetizing, suitable at any time of the meal but also for an aperitif.
After production, it ends its aging period in our caves that give it the ideal character to be appreciated with friends, around a table in front of a nice glass of red wine, just from the thought with which it was born.
The rind is NOT edible, so it cannot be eaten.
Ingredients: Pasteurized milk and pasteurized sheep’s milk, lactic acid bacteria, rennet and salt.
Size: about 4.8 kg.
Packaging: bare form.
Duration of the packaged product: 90 days.
ALLERGENS: MILK and MILK proteins.
Shape: square-based parallelepiped with rounded corners, convex heel and slightly rounded edge;
External appearance: medium thick, unctuous rind treated with oil and vinegar, slightly wrinkled, light brown in colour, with darker spots;
Internal appearance: semi-hard, compact and crumbly paste, fine eyes, evenly and evenly spread, straw yellow colour, medium thickness of nail;
Odour: lactic of melted butter, vegetable of hay, animal of clean fleece, and a note of dried fruit walnut;
Taste: sweet, medium-low, salty, medium-high, a slight acidity, the paste is compact, grainy, deformable and slightly adhesive.
Availability: all year round.
Food pairings: fantastic cut into cubes for an aperitif, placed in a dish with cold cuts, also perfect for the preparation of dishes.
Oenological pairings: structured white wine, red wine of medium structure, but also a bubble is good.
