Semi-salted artisanal butter with sage
If you think of butter and sage, the idea immediately goes to a product for seasoning pasta, ravioli for example … actually, the idea of this butter was born to offer a product to be used in the appetizer, but especially the aperitif because it is an ideal combination with a bubble.
This is not an industrial butter, but an artisan butter, still made with the churn, exclusively from fresh cream of centrifuge, only Italian milk and the addition of dehydrated sage and sea salt from Cervia.
It has a greenish color, with the presence of sage powder, the smell is pleasant, in addition to the cream nose immediately emerge the aromatic notes and characteristics of sage leaf. The unmistakable flavor, delicate but persistent and very, very appetizing.
Ingredients: Fresh Italian bread, Cervia wholemeal sea salt (1,4%), dehydrated sage (1,2%).
Size: 100 grams.
Packaging: cylinder wrapped with parchment paper.
Duration of the packaged product: 40 days.

Shape: it is defined as a ‘cylinder’ because it is a cylinder shape of about 10/12 cm in length and 3 cm in diameter;
External appearance: it has no rind or skin, at the most there is the natural oxidation of the external part with a more intense color than the inside, the external surface is smooth in color that can vary from light green to sage green;
Internal appearance: the paste is compact, light green in colour with the presence of sage powder and no holes, but it may have streaks on the inside, as the buttering is not carried out mechanically and therefore the colour will not be homogeneous;
Odour: the nose has a pleasant vegetal sensation of sage and lactic acid of fresh cream.
Taste: sweet, with this slightly savoury and aromatic note that makes it very appetizing, with hints of fresh grass, it has a very soluble paste, of medium-high persistence.
Food pairings: excellent when eaten raw on toasted bread croutons, but cold, as an aperitif. Of course, it can also be used to stir in risottos or season pasta.
Oenological pairings: an elegant and structured bubble.
