Bead Scamorza DeMagi
These scamorza pearls are slightly smaller than hazel nuts. Scamorza is a spun-paste cheese of whole pasteurised cow milk. The paste is like mozzarella paste, only drier. After the paste has been made it is rolled with a pin with wholes that cuts the paste into the right shape and size, they are first cooled and then cold-smoked (with Beechwood chips, below 18°C), so they can acquire the distinctive aroma and flavour.
Ingredients: whole cow milk, salt, rennet.
Weight: pearls of approximately 5 g.
Packing: heat sealed tray.
Shelf life of packed product: 20 days.
ALLERGENS: MILK and MILK protein.
SHAPE: the size of a peeled hazelnut.
EXTERNAL FEATURES: the medium consistency skin is smooth, glossy and uniform. Pale straw yellow when fresh, more intense if drier and golden if smoked.
INTERNAL FEATURES: the paste is creamy white, stringy and soft, when cut it is uniform and even.
ODOR: carries a delicate buttery and warm milk aroma, while if smoked it has intense smoky scents.
FLAVOUR: tasty and mildly salty but delicate if not smoked, while a bit pungent if smoked.
Availability: all year, but must be ordered.
Food pairing: Can be eaten cold with tomatoes, green salad and any vegetables, however, for best results we recommend eating them warm, either warmed in an oven, microwave or pan, as long as they are warm.
Wine pairing: very tannic red wine.
