Cow’s cheese, produced exclusively with Tuscan milk, but the real pearticularity is that it is not used animal rennet like most of the cheeses on the market, but a vegetable coagulant. This characteristic makes the cheese usable even by those who have a vegetarian diet. Obviously, from the sensory point of view, it will have different characteristics from the classic cheeses, both for its paste and for its taste and aroma: it is, in fact, moderately sweet and not very savoury and not very acidic, sometimes a slight bitter note can be found in the finish.

Forme : en forme de bol, également typique du fromage de brebis toscan, cylindrique à faces plates et talon convexe et arrondi ;
Aspect extérieur : croûte fine et lisse, d’une couleur qui peut varier du blanc crème au jaune paille, dont l’intensité varie en fonction de l’époque de maturation ;
Aspect interne : la pâte est compacte, de couleur blanc crème, douce et collante à la coupe, avec des trous homogènes mais irrégulièrement dispersés ;
Odeur : crémeux, avec du beurre frais et une légère pointe de croûte de pain ;
Goût et arôme : doux, légèrement salé avec des notes d’herbe fraîche, a une pâte légèrement adhésive, de persistance moyenne.
