“VKA” – Cow and sheep cheese refined with flowered rind refined with Vodka Bio Toscana

Our first cheese of the line of cheeses called “witty” or treated in a crust with spirits, however alcoholic or liquor, inspired by a great French cheese Epoisse, we thought to propose to our customers this line of cheeses that as well as good to eat, must also be fun and witty to see.

 

In addition, in this case we wanted to seal the relationship with the producer who produces this famous organic vodka entirely from the Tuscan chain by the name VKA, naming this cheese with the name of the same precious nectar.

The result is an elegant cheese, not complex and very pleasant to the palate, it is a “two milk” as it is used mixed milk of sheep and cow, which we use to wash the rind with vodka in repeated steps, until then print not with ink, but with charcoal the name of the cheese on the upper face.

It is recommended, in order to fully appreciate its characteristics, to consume it at room temperature but leave it closed in its packaging and discard it only at the last moment before eating it because the vodka being an alcohol is very volatile and drying you lose part of its characteristic.

 

Ingredients: Pasteurized cow’s milk and pasteurized sheep’s milk, pasteurized bread, rennet and salt. Crust treated with VKA Organic Vodka Tuscany and charcoal coloring vegetable.
Size: about 200 gr.
Packaging: shape wrapped with transparent film.
Duration of the packaged product: 25 days.

ALLERGENS: Milk and milk proteins, may contain traces of GLUTIN (because the processing of vodka, comes from wheat).

Product features:
Shape: parallelepiped with an ellipsoidal oval base, irregular flat faces and straight sides, sometimes with irregularities as well, as during ripening it tends to deform, creating convexity and depressions;
External appearance: very thin and slightly moist and sticky rind, its colour is pale straw yellow with a light coat of penicillium candidum and the inscription VKA.
Internal appearance: ivory in colour, soft and adhesive to the cut, with a few sparse and irregular holes that increase its ripeness, the holes almost disappear and the paste cremifies;
Smell: of cream and fresh butter, vegetable of fresh grass, yeast and slightly alcoholic;
Taste: very sweet, slightly salty, with a hint of acidity, it has a slightly adhesive paste, but also fairly soluble and of medium persistence.

 

Availability: since this is an experimental product, availability is not always required.

Food pairings: throughout the meal, from appetizers to aperitifs, in the cheese cutting board, but also for the preparation of first courses such as risotto mantecato with vodka and VKA or short pasta.

Oenological pairings: structured white wine but also with bubbles.
