“La Regina” – The Queen two milk cheese

This cheese is a “two-milk” cheese, we use sheep and cow milk together. The rind carries interesting scents due to the white bloomy layer. Just like a queen it is elegant, very delicate, yet rich in aromas. It is easily appreciated by everyone just like a real Queen is loved by her people. Best served at room temperature to fully perceive its characteristics and not cold from the fridge. Once you start eating it you cannot stop finish it.
Pasteurized sheep and cow milk, live milk enzymes, rennet, and salt. ALLERGENS: MILK and MILK protein
Cheese characteristics:
SHAPE: it has a square base with flat surfaces and straight sides, when it matures it tends to change shape and the surfaces become irregular.
EXTERNAL FEATURES: the pale yellow rind is very thin, slightly moist and sticky owed to the Penicillium candidum which spreads outward giving it a white bloomy layer over it.
INTERNAL FEATURE: after a few days of its production the paste appears with very fine but unevenly spread out eyes. It is ivory white, soft and sticky when cut. As it matures the eyes tend to disappear and the paste goes from a creamy to a semi-liquid consistency.
ODOR: scents of cream and fresh butter, green grass and woodland undergrowth.
FLAVOUR: it is very sweet, slightly savoury, and the paste is a bit grainy and somewhat sticky but also soluble. Medium persistence.

Great on a cheese platter, with cold cuts, fondue, and first course pasta or rice dishes.
- Wine pairings:
Best paired with a structured white wine, still or sparkling.
