Who says you don’t eat with your eyes first than with your mouth? This cheese certainly strikes and intrigues you just by looking at it.
The name poker aces is just because the figures of the playing cards are imprinted in the crust, then spades and flowers with charcoal and diamonds and hearts with sweet paprika.
Basically it is a cow’s milk cheese, where the rind is washed with turmeric dissolved in water and then sprinkled with the ingredients that characterize the color and figure.
The crust is therefore edible and flowery.

Forme : cylindrique avec des faces planes irrégulières, tout cela parce que pendant la maturation le fromage tend à se déformer, créant des dômes et des dépressions ;
Aspect extérieur : croûte très fine et légèrement humide grâce au pénicillium propagé à l’extérieur, de couleur jaune paille foncé tendant vers l’orange avec une légère couche de pénicillium candidum qui lui donne une couleur blanche ;
Aspect interne : quelques jours seulement après la production, il présente une pâte blanche crème finement texturée, irrégulière, douce et collante à la coupe, tout en augmentant sa maturité, l’aspect disparaît presque et la pâte crèmeuse devient semi-liquide ;
Odeur : crème, de beurre frais, d’herbe de légumes fraîche et d’un animal en laine polaire propre ;
Goût : sucré, légèrement salé, il a d’abord une pâte légèrement adhésive, mais ensuite très soluble de persistance moyenne.
