“Pizzichino” – Piquant Pecorino Cheese aged RESERVE
Every cheese has a name, which is chosen carefully. For this pecorino “RESERVE” best represents it as it is aged for up to a year, quite a long period for pecorino cheese. PIZZICHINO is never the same, the savoury, spicy and pungent flavour varies every time, typical of artisanal cheeses.
Ingredients: pasteurised sheep MILK, live milk enzymes, rennet and salt.
Weight: Approximately 9 Kg.
Packing: without wrapping.
Shelf life of packed product: 180 days.
ALLERGENS: MILK and MILK protein
SHAPE: cylindrical, with slightly rounded sides, about 12 cm thick and the flat surfaces are about 18-20 cm in diameter.
EXTERNAL FEATURES: the rind is hard and dark brown and shows the typical basket weave marks due to the draining mould.
INTERNAL FEATURES: the straw-yellow cheese paste is hard and compact, but crumbly. The undercrust is thick with evenly distributed eyes ranging in size from a pinhead to a grain of rice.
ODOR: it has hints of nuts, walnuts and broth as well as clear sheep and barn scents.
FLAVOUR: it is intense and quite spicy, very tasty, pleasant and tempting. Long persistence.
Availability: rarely and in modest quantities.
Food Pairing: This pecorino is great to be used in the kitchen for a variety of recipes, however, it is also a great meditation cheese paired with an appropriate wine. It will also be perfect on a cheese platter, served in flakes with aperitivo and together with cold cuts.
Wine Pairing: it goes well with great wines like Brunello di Montalcino, Nobile di Montepulciano, Sassicaia and Amarone..
