“Camomillo” – Pecorino refined with Chamomile flowers

 

From the Crosta d’Oro, another new creation is born in the De’ Magi caves, this very limited edition cheese, in fact, is made only once a year, after the flowering of the chamomile that is born spontaneously in our meadows, is collected and placed in small oak barrels. Time and aroma do the rest.

Surely, every year will be different, and probably it will be just luck, but the first time it was made really came a masterpiece, a cheese with a truly unique aroma, especially in the sub-crost, where you can perceive really characteristic vegetable scents.

 

Ingredients: Pasteurized sheep’s milk, live milk enzymes, rennet and salt. Surface treated with spontaneous chamomile flowers.
Size: about 1.3 kg.
Packaging: vacuum bag.
Duration of the packaged product: 90 days.

ALLERGENS: Milk and milk proteins.

Product features:
FORMA, irregular cylindrical shape with irregular faces and sides due to the deformation of the same during the refinement phase;
OUTDOOR ASPECT, the rind is moderately hard, wrinkled and stained with mould, with the presence of residues of the chamomile flowers that remain attached to it, the skin colour is not very defined, the mould is light grey, light green and darker patches;
INSIDE ASPECT, the paste inside is seen with tears due to fermentation, white tending to straw-colored with nail color much darker;
ODOR, a high vegetal scent of medium-high intensity that near the rind we find the characteristic of the same plant used for aging, as well as a hint of cooked butter and fermented milk.

TASTE, slightly sweet, medium salty, the structure is slightly grainy but overall quite soluble, has a medium-high persistence.

 

Availability: very limited, only once a year.

Food pairings: excellent if used to amaze those who will taste it, we propose to taste it in a “horizontal sheep’s milk cheese” or propose a whole series of sheep’s milk cheese aged in various ways to fully understand the variations in olfactory and taste during its maturation.

Oenological pairings: a full-bodied red wine with a good structure, or a very aromatic and structured white wine.
