“Afficato” – Pecorino refined with fig leaves

Now known for having unusual names or however “transgressive” in this case the name goes back to the fact that we refine this pecorino under fig leaves from here precisely becomes afficato. Obviously those who expect to find the sweet sensation or the taste of figs are disappointed, for the fact that using the leaf for aging we do not find at all the characteristic of the fruit, indeed … the leaf gives a slight bitter part, which characterizes the cheese especially in the undercrust, but remains sweet and slightly savory, with a slight acid note inside.

This cheese is only available in certain seasons of the year and in any case very particular, with a characteristic and enveloping taste.

 

Ingredients: Pasteurized goat’s milk, live milk enzymes, rennet and salt, treated in a crust with fresh fig leaves.

Product features:

Shape: irregular cylindrical shape with irregular faces and sides due to the slight deformation of the same during the refining phase;
External appearance: the rind is thin and wrinkled, with the leaves sticking inevitably during the maturing process, the colour of the rind is light brown and green, therefore with the possible presence of mould (this depends on where the cheese was when it was matured);

Internal appearance: the inside of the cheese is pinstripe, white in colour tending towards straw-coloured near the rind, therefore with a rather evident nail and there are irregular holes spread unevenly;

Odour: lactic butter but also a slight hint of boiled vegetables such as cauliflower, and especially in the crust an animal sensation of stable and light ammonia;
Taste: in the mouth it is crumbly, has a balanced taste, medium low salty and medium sweet, with a slightly acidic and bitter note.

 

Availability: seasonal and limited.

Food pairings: excellent on a cheese plate, as an appetizer or to make tastings in a horizontal pecorino cheese dish.

Oenological pairings: red wine of medium structure and if white not too aromatic.
