“ZENZERINO” – A washed-crust cheese of Cow’s milk refined with turmeric and ginger
In the line of parallelepipedal-shaped cheeses with a square base and washed rind of cow’s milk, each aged with different ingredients and techniques, this is the third born in fact is the three of diamonds.
The processing of this cheese consists in repeatedly washing the rind with a mixture of turmeric and fresh ginger, this treatment gives the cheese a saffron yellow color and a slight freshness and pungency, given precisely by the root of fresh ginger. A “fashionable” cheese, that is, using two ingredients whose properties have recently been widely used for healthy cooking, we wanted to try to propose our own recipe, which usually meets with great favor of those who love these two ingredients … but not only.
The crust is edible.
Ingredients: Pasteurized cow’s milk, live milk enzymes, rennet and salt, treated in a crust with turmeric and ginger.
Size: about 600 gr.
Packaging: shape wrapped with film.
Duration of the packaged product: 25 days.
ALLERGENS: MILK and MILK proteins.
Shape: square-based parallelepipedal, with irregular flat faces and irregular convex heel;
External appearance: thin, moist and sticky rind, saffron yellow in colour, with the presence of some moulds;
Internal appearance: soft, moist paste, almost no holes, however sparse and irregular, uneven, the colour is ivory;
Odour: in the middle of the paste you can find lactic acid of yoghurt and butter, but also of fermented grass and intense animal of the stable, while in the crust you can find a fruity citrus;
Flavour: medium flavour, medium sweetness, low acidity, the paste is slightly adhesive especially at the centre, but all in all fairly soluble in the mouth with medium persistence, high aromaticity if eaten with the rind, but also the characteristic pungency of ginger.
Availability: since this is an experimental product is not always available, indeed it is essential to request availability at the time of order, it is not bookable.
Food pairings: interesting to include in the cheese dish as an appetizer or second course, could also be used for the realization of first courses, especially risottos.
Oenological pairings: an aromatic white wine.
