“Dama Bianca” – The White Checkersboard Goat’s milk
All we can say, but not that we lack imagination; this cheese has been created to be well noticed in a cheese market because, certainly, is not unnoticed. The other particularity of this cheese is that even if being produced only with goat’s milk, has a very delicate taste that is able to meet the wishes and tastes of every palate.
It has a very soft dough that tends to become creamy and that can be mostly enjoyed if taken outside fridge at least one hour before tasting to express all its aromas and flavors.
Ingredients: pasteurised sheep MILK, live milk enzymes, rennet and salt.
Weight: Approximately 1.800 gr.
Packing: wrapped in cling film.
Shelf life of packed product: 30 days.
SHAPE: parallelepiped with a square base with flat faces but just curved and straight sides and slightly rounded with slightly rounded edge;.
EXTERNAL FEATURES: the rind is thin and a bit moist and sticky because of the Penicillium which has spread externally, its color is characteristic for the presence of white mold and black where it was scattered charcoal.
INTERNAL FEATURES: soft, moist, irregular holes and scattered unevenly, the color is creamy white;
ODOR: yogurt and fresh butter, a herbaceous plant, but mostly what you smell is clearly its distinctive animal, hircine medium intensity;
FLAVOUR: very sweet, slightly salty, at the beginning slightly sticky dough, very deformable but also quite soluble in the mouth with an aroma of medium persistence.
Availability: all year, but must be ordered.
Food pairing: it is a must on a cheese platter yet it can be used to prepare antipasto dishes which require cheese that can melt well, and in the kitchen in a variety of rice and pasta recipes.
Wine pairing: not very structured white wine.
