“POKER D’ASSI” THE POKER ACE, Soft cheese cow’s milk
Who says you don’t eat with your eyes first than with your mouth? This cheese certainly strikes and intrigues you just by looking at it.
The name poker aces is just because the figures of the playing cards are imprinted in the crust, then spades and flowers with charcoal and diamonds and hearts with sweet paprika.
Basically it is a cow’s milk cheese, where the rind is washed with turmeric dissolved in water and then sprinkled with the ingredients that characterize the color and figure.
The crust is therefore edible and flowery.
Ingredients: Pasteurized cow’s milk, pasteurized CREAM, live lactic acid bacteria, rennet and salt, treated in a crust with turmeric, charcoal (black) and sweet paprika (red).
Size: about 180 gr.
Packaging: shape wrapped with transparent film.
Duration of the packaged product: 25 days.
ALLERGENS: MILK and MILK proteins.
Shape: cylindrical with irregular flat faces and irregular barefoot, all this because during maturation tends to deform, creating domes and depressions;
External appearance: very thin and slightly moist rind due to the penicillium propagated on the outside, its colour is deep straw yellow tending towards orange with a slight coat of penicillium candidum which gives it a white colour;
Internal appearance: just a few days after production, it has a finely textured, uneven and irregular creamy white paste, soft and sticky to the cut, while increasing its ripeness, the look almost disappears and the creamy paste becomes semi-liquid;
Smell: the nose of cream, fresh butter, fresh vegetable grass and a clean fleece animal;
Flavour: sweet, slightly salty, it has a slightly adhesive paste at first, but then highly soluble of medium persistence.
Availability: all year round.
Food pairings: to be used in a plate of cheeses makes a good impression, or to make special appetizers if served with a teaspoon, excellent for a risotto. If you want to pair it with dried fruit such as seasonal walnuts.
Oenological pairings: structured white wine or a bubble.
