“BEERBONE” – Cow’s milk with flowered rind and beer inside

Beer for beer, bone for good … a cheese own birbone as you read, or in Tuscany is a boy a bit ‘fluffy, but ultimately not bad, so this nickname to this cheese suits him just fine.

A cheese that kidnaps you, interests you and fascinates you, because that modest dose of beer inserted in the milk during processing, before adding the ferments and rennet, makes it possible to find in the nose and mouth the delicate characteristics of beer given its balance and its delicacy.
Its flowery rind then adds a touch of undergrowth, mushroom mushrooms that makes it even more special.

The rind is edible, but it is advisable to taste the pasta first and then eat the rind as well to better understand how much this cheese improves if you also eat the surface.


Ingredients: Pasteurized cow’s milk, beer (water, MALTO D’ORZO, hops, yeast) selected lactic ferments, liquid calf rennet and salt.
Size: about 600 gr.
Packaging: individually wrapped form.
Duration of the packaged product: 45 days.

Product features:
Shape: irregular cylindrical shape with slightly concave faces on the inside and convex sides on the outside, a sign of the ripening and protection of the paste on the inside.
External appearance: thin, flowery rind, also known as feathery rind, white in colour;
Internal appearance: the paste is ivory in colour, almost dove grey, soft and tender with a barely hinted nail, with irregular and uneven medium-fine eyes;
Odour: on the nose, the first thing that emerges is a smell of fresh mushroom mushrooms if you smell the rind, while inside the pasta we have a slight smell of the typical foam of beer and vegetable wheat, while the lactic notes of cream and butter are more evident;
Taste: eating pasta first has a sweet, not very savoury, acid taste, which reminds of beer in a much more evident way than the nose, while eating the rind reveals the aromas of mushroom mushrooms, the pasta slightly sticky and lumpy.


Availability: almost always available.

Food pairings: great to be enjoyed on a cheese plate as an appetizer or main course.

Oenological pairings: beer, still white wine or bubble.
