“SUPERBIA” – Superb aged Blue of buffalo’s milk
The line of 7 capital vices begins with “Superbia”, this blue-veined buffalo milk only is a cheese that looks down on everyone else, even if you taste it you immediately understand that it is not a blue like all the others … is a true work of art.
A cheese with an impressive size compared to the others in our assortment, since the shape is about 6/7 kg. Its character is really complex as it respects the characteristics of buffalo milk, i.e. sweetness and a slight acidity, the long maturation then also gives a good dose of flavor and pungency, but in the end beyond the intense animal sensation leaves all those notes that are the characteristics of buffalo milk
If it is used in gastronomic preparations or in dishes, care must be taken not to exceed the quantity.
Refined for at least 150 days in our caves, it acquires a truly unique characteristic.
The crust is NOT edible.
In 2018 he won the Superior Quality Award at Infiniti Blu.
Ingredients: MILK of pasteurized buffalo, rennet, salt and penicillium.
Size: About 6 kg.
Packaging: shape wrapped in aluminised paper.
Duration of the packaged product: 60 days.
ALLERGENS: MILK and MILK proteins.
Shape: cylindrical with flat faces and straight but slightly convex heel, with a slightly rounded edge;
External appearance: the rind is mouldy and slightly wrinkled, sometimes cracked, of medium-hard consistency and has a light brown colour and darker patches due to the mould on the outside; the two sides have holes drilled to allow oxygen to enter during the ripening phase;
Internal appearance: soft and raw paste, moist and compact, slightly crumbly, the erbrinatura present has a homogeneous distribution of molds, has a white ivory color and the erborinatura occurs mainly with dark blue and green sage and light gray in the chimneys, has a thin nail;
Odour: a high animal scent of barn, followed by the vegetable of fresh porcini mushroom and undergrowth, lactic cooked butter, as well as a slight ammoniacal scent that may be more intense as the ripening increases;
Taste: sweet, medium-low, high saltiness, medium acidity and a low bitterness, as a trigeminal sensation prevails the spicy and with a high persistence.
Availability: all year round.
Food pairings: cheese for meditation, but can be used at any time of the meal and in any way. Whether as an aperitif, as an appetizer, in a plate of cheese served last will give character and importance to the assortment. It can be used for first courses, for risottos, but also for fillings of fresh pasta, as a sauce for a second course, finally as an end of the meal with a sweet wine.
Oenological pairings: Tuscan sweet Vin Santo, a malvasia, a late harvest, a sweet aleatico or a passito.
