“IRINA” – The Lover Blue of cow’s milk refined with black cherry and pink pepper
This cheese is part of the family history of Pinetta and Pino, who was betrayed by his “wife” with Saverio (the other one is blue). Pino thought he was a passionate and sweet lover, with the name “Soviet”… this lover with a changing personality, the sweet character is intensely represented by the sour cherry, the spicy side by the pink pepper and the medium sweet and spicy blue colour only confirms the characteristics of the personality of this Irina.
Funny story, but to make this cheese took many months of study and careful evaluation, just to be able to make a cheese with the characteristics we wanted … we have succeeded, but to be honest, we have exceeded expectations! Now we just have to taste it.
The rind is edible, in fact, it must be eaten with the respective sour cherries and pink pepper.
Cheese to be enjoyed at the end of a meal, if you like, instead of dessert or in any case for meditation.
In 2017, at the national competition INFINITI BLU of Gorgonzola, he obtained the prestigious recognition of Quality.
Ingredients: Pasteurized milk, milk enzymes, rennet, salt, penicillium roqueforti, candied black cherries (sugar, black cherries, glucose syrup from GRANO), pink pepper, water-alcoholic food.
Size: about 2.7 kg.
Packaging: shape wrapped in aluminised paper and slow vacuum.
Duration of the packaged product: 30 days.
ALLERGENS: MILK and MILK proteins, possible traces of GLUTIN.
Shape: cylindrical with flat faces and straight heel and slightly rounded edge;
External appearance: the elastic rind has a medium-low consistency and is made up of black cherries and pink pepper, which keep the surface moist and slightly sticky. The deep straw yellow colour tends to be amber with burgundy reflections;
Internal appearance: very thin nail, the paste is soft, moist and elastic, the colour varies from ivory white to pale straw yellow, in the centre where there is the hole where the sour cherries have passed it is burgundy in colour, the blue-green marbling, but when opened it tends towards light yellowish-green, all in all with a fairly homogeneous distribution of the moulds;
Odour: characteristic fruity scent of sour cherries in syrup, slightly alcoholic, which in certain points of the paste is surmounted by that of the stable animal, followed by the vegetable with hints of undergrowth;
Taste: sweet of medium-high intensity, medium salty, low acidity and a very pleasant light bitterness that is masked by the sweetness of sour cherries, and spicy if you find pink pepper.
Availability: very limited, you need to book it and wait a while to get it.
Food pairings: recommended as a cheese for end of meal or meditation, but who wants, you can also indulge in other uses for the preparation of dishes.
Oenological pairings: Any sweet dessert wine or dry pastry, with very little acidity.
