Gran De’ Magi – overaged more than 36/60 months

We created this new cheese to astonish those who taste it. If you think this is a Parmigiano reggiano or a Grana padano, you are truly mistaken! It is a dairy work of art, made mixing excellent fresh cow milk and buffalo milk. The result will be evident to those who decide to taste it.
After a wheel has been checked by our cheese expert, who will tap it all around to ensure it is perfect, it is selected, chosen and branded with our brand name and logo to protect our selection.
It is aged for a minimum of 48 months, but in our grottoes some wheels have been ageing for 60 months. Best eaten in morsels, flakes or grated over food.

Ingredients: cow milk, buffalo MILK, live milk enzymes, rennet and salt.
Weight: approximately 36 kg.
Packing: no wrapping (we can vacuum pack it if requested).
Shelf life of packed product: 180 days(vacuum packed: 120 days).

ALLERGENS: MILK and MILK protein

Cheese characteristics:
SHAPE: cylindrical with flat surfaces and rounded sides and slightly rounded edges.
EXTERNAL FEATURES: the rind is very hard, smooth and the colour is golden-amber yellow; it carries 12 brand marks, 8 on the flat surfaces and 4 on the sides to guarantee it was selected by us.
INTERNAL FEATURES: the straw yellow paste has no eyes, it is hard and crumbly with some tyrosine clusters, typical of well-aged cheese.
ODOR: dairy scents of cooked butter as well as hazel nut, meat stock and a mild hint of sheep and barn.
FLAVOUR: the flavour is very balanced, salty and sweet, the paste is quite crumbly and soluble. Very persistent.

Availability: all year.

Food pairing: it will enhance any dish it is used on, either a plain pasta with “cacio e pepe“ (grated cheese and pepper), as well as sprinkled over food to make excellent grilled dishes. It is great with aperitivo or served at the end of a meal.

Wine pairing: best paired with a very important red wine as well as a high class sparkling wine.
