“Sbiriguda” – Cow’s milk cheese semi-aged

 

The saga continues… after Antani and Prematurata, we add Sbiriguda, a cheese that has an unusual shape, but above all its use is unusual: grilled or breaded and fried.

It is not a usual cheese, it is not a mature cheese or a cheese with an intense flavour, it has an excellent taste and is a pleasure to be enjoyed alone or as a raw material in recipes.

The rind is edible, so those who want can eat it.

 

Ingredients: Pasteurized milk, salt, rennet, lactic acid bacteria, preservative: lysozyme (Egg protein).
Size: about 4 Kg.
Packaging: shape wrapped with transparent film.
Duration of the packaged product: 30 days.

ALLERGENS: Milk and milk proteins (lactose < 0.1%), Eggs.

Product features:
Shape: “brick” shape, rectangular parallelepipedal with flat faces and straight sides;
External appearance: thin, dry, slightly striped rind with a deep straw yellow colour;
Internal appearance: semi-hard, compact paste, the eyes are thin and evenly spread, of average regular size, the colour is straw yellow;
Odour: interesting is the buttery lactic, vegetable fermented herbaceous, slight animal scent of stable and very aromatic floral;
Taste: the primary sensation is the medium sweetness, then the medium salty, a low acidity, the paste is compact, grainy, deformable and slightly adhesive.

 

Availability: all year round.

Food pairings: for the summer it can be cut into cubes to embellish salads, it can be cut thinly to enrich sandwiches, but its vocation is to be cut a centimeter high and grilled or breaded and fried.

Oenological pairings: aromatic white wine.
