“Biscarino” – Pecorino Aged
In Arezzo dialect, or rather more precisely in the Val di Chiana, to define a man as “Biscarino” is a diminutive of bisquero (or rather not very intelligent), but in this case it is also used to indicate a very playful person, one who mocks others, who likes to have fun but not with malice. This cheese was born precisely to play, we call it a cheese “fun” because it is proposed to use it in aperitifs thrown, perhaps combined with a bottle of good red and with Tuscan bread just to have fun with friends to have an aperitif in the family so it helps the banquet.
As well as being good, and therefore able to convey emotion, it gives pure fun to those who use it in this formula.
Ingredients: Pasteurized sheep’s milk, lactic acid bacteria, kid rennet and salt. Surface treated with oil and vinegar.

Shape: irregular cylindrical, 6/7 cm high, with straight sides and flat, but slightly convex faces, with a slightly rounded edge.
External appearance: the rind is sandy in colour, darker or darker due to perspiration during the seasoning phase and to the treatment of the rind with oil and wine vinegar during the ageing phase.
Internal appearance: it has a hard, compact but crumbly paste and a slight glance, a deep straw yellow colour, with a nail present but not too thick;
Odour: the nose has notes of melted butter and vegetables such as toasted dried fruit, and a characteristic animal scent of high intensity;
Flavour: it has a high sapidity, spicy and pungent, which accentuates with aging, but very pleasant, balanced and appetizing. A very long persistence.
Food pairings: defined as “fun” or convivial cheese because it can be cut into flakes and eaten as an aperitif or as an excellent accompaniment for very tasty cold cuts. also used in the kitchen as a grater, when it is very seasoned.
Oenological pairings: it can have a multitude of combinations, from a bubble, a very structured red and alcohol to a sweet or raisin wine.
