Pecorino Golden Crust 1000
This is an evolution, or rather a small variation, of our classic historic cheese, defined as a thousand because it is produced in spring, it is sold mainly in the Christmas period and, given its long aging period, it falls to such an extent that it becomes less than one kilo, therefore less than 1000 grams. As for all the other sheep’s cheeses, we take care of the maturing ourselves according to the most ancient Tuscan traditions. During the aging process it is treated with olive oil and at the end of its maturation, it assumes this characteristic golden color. Labeled with a seal of lacquer wax and a pendant that also makes it beautiful presentation for a gift.
Ingredients: Pasteurized sheep’s milk, live milk enzymes, rennet and salt. Surface treated with oil.
Size: about 0.9 kg.
Packaging: bare shape (but it can also be packed in a vacuum bag).
Duration of the packaged product: 120 days.
ALLERGENS: MILK and MILK proteins.
Shape: bowled, typical of Tuscan pecorino, cylindrical with flat faces and convex and rounded heel;
External appearance: crust of good consistency, hard and almost smooth, but with marks of the die in the faces, the characteristic golden-light brown color, with some darker stain in the cavities;
Internal appearance: the paste is dry and pinstripe, straw-white with nails present and due to the golden color of the skin, there may be small holes scattered irregularly;
Odour: sheep’s animal, but delicate and vegetal with hay and dried fruit;
Taste: balanced, slightly spicy, salty but sweet, in the mouth is very brittle and has an excellent persistence.
Availability: from October to December.
Food pairings: we recommend it to use in the dish of cheeses or for an appetizer, if desired you can combine with honey, a jelly of Vin Santo or a mostarda of green tomatoes.
Oenological pairings: whether it is white or red, the important thing is that it is fairly structured.
