The Girotondo – Pecorino cheese for girolle

The Girotondo, is not what you think when you look at the picture… that is, it is not the most famous Swiss cheese, but a complete unknown sheep’s cheese produced only with Italian milk, made precisely to give lustre to our dairy skills.

It took almost two years of trials and experiments to make this cheese, but then we managed to make the cheese with the ideal paste and structure to be used in the Girolle as well. Ideal for aperitifs, appetizers or carpaccio but also for decoration of dishes.

Edible crust.

Ingredients: Pasteurized sheep’s milk, live milk enzymes, rennet and salt. Surface treated with oil.
Size: 500/800 approx.
Packaging: bare shape (but it can also be packed in a vacuum bag).
Duration of the packaged product: 90 days.

ALLERGENS: MILK and MILK proteins.

Product features:
Shape: cylindrical, slightly convex heel of about 8 cm high and almost flat faces of 8-9 cm side;
External appearance: the rind is hard and has a deep straw colour with darker and more irregular spots which vary according to the seasoning and therefore the ageing process with the possible presence of mould;
Internal appearance: it has a hard, compact but crumbly paste and a slight look, straw yellow in colour with a nail size of almost half a centimetre;
Odour: there are animal notes (clean sheep’s coat) and stable, with notes of cooked butter and vegetables such as toasted dried fruit, and a hint of undergrowth;
Taste: it is delicately sweet and then savoury but not salty, in the mouth we can see the usual sensations perceived on the nose but much more amplified.

Availability: limited.

Food pairings: spectacular in the aperitif, as a fun time with friends, but also in the kitchen as a decoration of dishes but also to garnish carpaccio or risotto.

Oenological pairings: fantastic with a classy bubble, perfect with Franciacorta, Trento docg, but also with many other Italian or French types.
