“Correggiolo” – Pecorino refined with olive stones.

Unique, this cheese may or may not like it, the name may or may not like it… but it certainly describes itself as unique. A cheese produced only in a few months of the year and in a few units, so it can be defined as one of our rarities.

After the harvesting of the olives there is a farm in Chianti that produces the oil by stoning the olives, the most particular thing is that it uses only monocultivar olives (ie of a single variety of olives). Therefore, we have decided to take this exclusive raw material of theirs, namely the hazelnuts of the CORREGGIOLO variety, and we have used them to refine our pecorino.
The result? Few will taste it and few will really understand its peculiarity.

Ingredients: MILK of pasteurized sheep, live milk enzymes, rennet and salt, treated in a crust with olive stones.

Product characteristics:

Shape: irregular cylindrical shape with irregular faces and sides due to the slight deformation of the same during the refinement phase;
External appearance: the rind is thin and wrinkled, with the presence of small hollows due to the pressure of the stones between shape and shape; the colour of the rind is varied, from straw to green, therefore with the possible presence of mould (this depends on where the shape was at the time of maturing);

Internal appearance: inside, the paste is chalky, white tending towards straw-coloured near the rind and there are irregular holes spread unevenly;

Odour: lactic butter but also a slight scent of boiled vegetables such as boiled potato and oil mill (especially in the crust), vegetable wet wood;
Flavour: in the mouth it is crumbly, has a balanced taste, salty but sweet.

Availability: seasonal and limited.

Food pairings: excellent on a cheese plate, as an appetizer or to make tastings in a horizontal pecorino cheese dish.

Oenological pairings: full-bodied red wine with good structure.
