“MOSKITO” – A washed-crust cheese of Cow’s milk refined with Sambuca and coffee
This is a very special cheese, straddling the “witty” cheeses, i.e. those treated with spirits and the “quadri” line (parallelepipedal cheeses with a square base and washed rind of cow’s milk, each aged with different ingredients and techniques), since we add sambuca and coffee to a rind cheese washed with water and salt.
The name comes precisely from putting the coffee bean in the sambuca (fly), so this repeated treatment in the rind makes the cheese acquire very special aromatic notes, since the anise emerges and the slight acidic and alcoholic note together with the bitter where the coffee bean is located.
Absolutely a cheese to try, given its complexity in describing it, a cheese that was not there, a creation given by the imagination and inspiration of the master refiner.
The rind is edible.
Ingredients: Pasteurized cow’s milk, live milk enzymes, rennet and salt, treated in a crust with elderberry and coffee.
Size: about 600 gr.
Packaging: shape wrapped with film.
Duration of the packaged product: 25 days.
ALLERGENS: MILK and MILK proteins.
Shape: square-based parallelepipedal, with irregular flat faces and irregular convex heel;
External appearance: thin, moist and sticky rind, golden in colour, with the presence of some moulds and whole and crumbled coffee beans;
Internal appearance: soft, moist paste, almost no holes, however sparse and irregular, uneven, the color is ivory;
Odour: in the middle of the dough you can find lactic acid of yoghurt and butter, vegetable of hay and boiled potato and stable animal, while in the crust we find the characteristic scent of anise, licorice and coffee;
Taste: medium-low flavor, medium-high sweetness, low acidity, low bitterness, the paste is slightly adhesive especially at the center, but all things considered also quite soluble in the mouth with a medium persistence, high aromaticity if you eat with the crust, increases the bitterness if you chew the coffee.
Availability: since this is an experimental product is not always available, indeed it is essential to request availability at the time of order, it is not bookable.
Food pairings: interesting to include in the cheese dish as an appetizer or main course, but also for dessert.
Oenological pairings: a red wine of medium structure.
