“Il Pervertito” – The Pervert with pears three-milks pyramid

Being different also means having the courage to make a line of perverse cheeses, or cheeses that have a perversion, that of concealing within them an ingredient that characterizes the taste and appearance. The perversion also lies in the fact that we are not in favour of combining our cheeses with honeys or mustards on top of cheese … in this case we have hidden them inside the dough.

A chisel work of dairy art, consists in unloading inside the truncated fuscelline of pyramid a first part of curd, then insert the added ingredient and then continue to fill the fuscella with the rest of the curd. you need patience and precision to get an excellent result.

 

In this case it is a three-milk cheese (cow, goat and sheep) where it is placed inside a whole king pear under syrup and in the crust we sprinkle it with ginger powder, so it becomes the pervert with the pears.

The crust is obviously edible.

 

Ingredients: Cow’s milk, goat’s milk and sheep’s milk, CREAM, whole king’s pear, rennet, salt, sugar, glucose syrup. treated in a crust with sprinkling of ginger.
Size: about 400 gr.
Packaging: shape wrapped with film.
Duration of the packaged product: 25 days.

ALLERGENS: MILK and MILK proteins.

Product features:
Shape: slightly irregular pyramid trunk;
External appearance: thin, moist, slightly wrinkled and flowery rind, white in colour and ivory in the upper part due to ginger powder, with the possible presence of green or grey moulds;
Internal appearance: soft, moist paste, almost no holes, however sparse and irregular, the color is white, obviously with the cut is the pear in the middle;
Odour: lactic of yoghurt and vegetable of grass, a fruity of dried fruit of walnut and a light animal ircino, while in crust we find a characteristic note of mushroom and ammonia beyond that a light pungency due to the ginger;
Taste: medium-low flavor, medium sweetness (which increases if you eat pear), medium low acidity, the paste is slightly adhesive but all in all even quite soluble in the mouth, medium low persistence.

Food pairings: interesting for its shape and chromaticity to be used in the cheese dish as an appetizer or as a main course.

Oenological pairings: a medium-structured white wine.
