“Il Degenerato” – The Degenerated with apricots three-milks
Being different also means having the courage to make a line of perverse cheeses, or cheeses that have a perversion, that of concealing within them an ingredient that characterizes the taste and appearance. The perversion also lies in the fact that we are not in favour of combining our cheeses with honeys or mustards on top of cheese … in this case we have hidden them inside the dough.
A chisel work of dairy art, consists in unloading inside the truncated fuscelline of pyramid a first part of curd, then insert the added ingredient and then continue to fill the fuscella with the rest of the curd. you need patience and precision to get an excellent result.
In this case it is a three-milk cheese (cow, goat and sheep) where it is placed inside of the candied cherries and senapate in the crust sprinkle with the powder of beetroot, so it becomes the DEGENERATE with ‘ALBICOCCHE.
The crust is obviously edible.
Ingredients: Cow’s milk, goat’s milk and sheep’s milk, CREAM, apricots, rennet, salt, sugar, glucose syrup, aroma of SENAPE. Treated in a crust with a sprinkling of turmeric.
Size: about 350 gr.

ALLERGENS: Milk and milk proteins, SENAPE.
Shape: slightly irregular pyramid trunk;
External appearance: thin, moist, slightly wrinkled and flowery rind, white in colour and amber-yellow at the top due to turmeric, with the possible presence of green or grey moulds;
Internal appearance: soft, moist paste, almost no holes, however sparse and irregular, the colour is white, obviously with the cut there are apricots in the middle;
Odour: lactic of yoghurt and vegetable of grass, a fruity of dried fruit of apricots and a light animal ircino, while in the crust we find a characteristic note of fungus and ammonia as well as a slight spicy sensation typical of turmeric;
Taste: medium-low flavor, medium sweetness (which increases if you eat apricots), medium low acidity, the paste is slightly adhesive but all in all even quite soluble in the mouth, medium persistence. We find a slight pungency especially if you eat apricots.
Availability: since this is an experimental product is not always available, indeed it is essential to request availability at the time of order, it is not bookable.
Food pairings: interesting for its shape and chromaticity to be used in the cheese dish as an appetizer or as a main course.
Oenological pairings: a white wine of medium structure or bubble.
