Pecorino cheese ‘Limited Reserve’ Damned Tuscan “Maledetto Toscano”

Its shape is irregular because it is placed in the old traditional cheese shapes (fascere) rather than in plastic shapes. As well as being a RESERVE, which guarantees quality, it is also slightly smoked with smoke from Tuscan cigar tobacco, after a 12 month ageing period. All this makes it a truly unique cheese.
The kid goat rennet, gives it a pungent character which goes very well with a Tuscan cigar and a good glass of rum.

The perfect cheese for meditation, unique and rare in both type and essence.

Ingredients: pasteurised sheep MILK, live milk enzymes, kid rennet and salt. Rind surface is treated with oil, vinegar and tobacco smoke.
Weight: between 5 to 9 kg.
Packing: no wrapping (we can vacuum pack them if requested).
Shelf life of packed product: 180 days (vacuum packed: 120 days).

Cheese characteristics:

SHAPE: it is cylindrical but not perfectly so, it has straight 12 cm sides and flat but concave 20-28 cm diameter surfaces.
EXTERNAL FEATURES: the colour can vary from a light to dark brown, and depends on its sweating while ageing, the oil and vinegar treatment of the rind while maturing and the final smoking stage with tobacco smoke.
INTERNAL FEATURES: the intense straw-yellow paste is hard and compact but crumbly, with some eyes and a medium sized undercrust.
ODOR: melted butter and roasted nuts can be perceived as well as a very intense barn scent. The rind is smoky.
FLAVOUR: intensely savoury, piquant and pungent with flavours which may increase with ageing, yet it is very pleasant, balanced and tasty. Very persistent.

Availability: limited and numbered.
Food pairing: Enjoy it with friends; however, it is a great meditation cheese, at the end of a meal with a glass of whisky or rum and a Tuscan cigar.  Can also be used in many other pairings and in the kitchen to make interesting recipes.
Wine pairing: it can only be served with exceptional wines.
